Starting up multiple community choirs – repertoire advice

I’m looking for some advice on particular choral repertoire that I’m sifting through for concerts. I’m in the interesting position where it looks like I’ll be able to start up community elementary, middle and high school ensembles. Here are pieces I’m looking at, and I’m curious as to your struggles with any of them, and what your students had as far as challenges are concerned. Thanks for your time.
